Khinkali is a traditional Georgian dish, originating in the mountainous regions of Georgia—especially the Mtiuleti region and the surrounding districts of Khevsureti and Tusheti. It was there that the traditional dough, wrapped around ground meat and a generous amount of broth, originated.
Originally, khinkali was made with lamb or beef, generously seasoned with black pepper and herbs. Over time, a mixture of beef and pork was added to the ground meat, and the recipe was simplified and adapted to suit a variety of tastes.
